Oatmeal Cookies

Oatmeal cookies

Ingredients:
2 cups or 24 oz quick-cooking oats ( one cup whole oatmeal, one blended)
2 cups all-purpose flour
1/3 cup sugar
1/3 cup packed brown sugar
1 and 1/2 teaspoon baking powder
1/2 teaspoon salt
2 large eggs
2 teaspoon vanilla extract
1 1/2 cups raisins
2 teaspoons of margarine
2/3 – 1 cup of water

Directions:
In a large mixing bowl, combine the oats, flour, sugars, baking powder and salt.
Add the egg substitute, corn syrup and vanilla; mix well.
Drop by rounded teaspoonfuls onto baking sheets coated with cooking spray. Bake at 350° for 10-12 minutes. Remove to wire racks. Yield: 2 dozen.
